Rogan Josh

Kashmiri Rogan Josh is a delicious flavorful Lamb curry that comes from Persian origin. It is the signature dish of Kashmir, where the name is derived from Persian words in which Rogan meals oil and Josh mean Intense heat. Kashmiri Rogan Josh is an integral part of the lavish spread Wazwan. No celebrations are complete without this signature dish, typically made with lamb but now days even mutton is used to make this authentic and aromatic Rogan Josh.

INGREDIENTS

Serves: 2-4

  • Mutton, cut into pieces

  • Oil

  • Ghee

  • Curd, whisked

  • Cumin Seeds

  • Cinnamon Stick

  • Cloves

  • Bay Leaf

  • Black Cardamom

  • Green Cardamom

  • Kashmiri Red Chili Powder

  • Fennel Powder

  • Ginger Powder

  • Asafetida Powder

  • Garam Masala Powder

  • Salt

  • Water

RECIPE

STEP 01

Wash and clean the mutton. Heat oil and add a pinch of asafetida and cumin seeds. Afterwards add cinnamon, cloves, bay leaf along with black and green cardamom. Sauté it.

STEP 02

Then add the mutton pieces to the oil and cook until they are golden brown. To this add chili powder and whisked curd and mix well on low flame.

STEP 03

Now add fennel powder and ginger powder. Mix it well. Now add 1 1/2 cups of water and salt. Stir it.

STEP 04

Pressure cook it for 3 whistles. Allow the steam to release, and then open the lid.

STEP 05

Finally, add garam masala and let it boil for 2 minutes. If the gravy is too thick, you can add 0.5 cups of water and let it boil again.

STEP 06

Pour hot ghee on the dish before serving.
