Red Paneer

As the name suggests, Kashmiri Red Paneer curry is fiery red, and its appealing crimson hue is achieved through the use of Kashmiri Red Chili powder. The combination of aromatic whole spices and fragrant spice powders makes this simple dish incredibly flavorful.

INGREDIENTS

Serves: 4-6

  • Paneer

  • Oil

  • Cumin Seeds

  • Bay Leaves

  • Cinnamon Stick

  • Green Cardamom

  • Black Cardamom

  • Turmeric Powder

  • Fennel Powder

  • Ginger Powder

  • Kashmiri Red Chili Powder

  • Coriander Leaves

  • Black Cumin (Kala Zeera)

  • Salt

RECIPE

STEP 01

Cut the paneer into rectangular pieces and heat 8 tbsp of oil in a pan.

STEP 02

Add the paneer pieces to the pan, fry them on all sides until golden brown, and keep flipping them while frying.

STEP 03

Remove the paneer pieces from the pan and place them in a bowl filled with 2 cups of water and turmeric powder. Set aside.

STEP 04

In the same pan with the remaining oil, add asafetida, bay leaves, cloves, green and black cardamom, and cinnamon stick. Let them crackle for 4-5 seconds.

STEP 05

Now, add red chili powder and a little water. Stir well until a red color forms.

STEP 06

Add the water in which the paneer was soaked, along with 1 teaspoon of salt, ginger powder, and fennel powder. Bring the curry to a boil for half an hour on low flame.

STEP 07

Check the salt, garnish with coriander leaves, add black cumin seeds (zeera), and serve hot.
