Kabargah

Kabargah is a popular Kashmiri delicacy known for its crispy texture and flavorful spices. It is often served during special occasions and gatherings as an appetizer or as a side dish.

INGREDIENTS

Serves: 2-4

  • Lamb/Mutton Ribs

  • Water

  • Milk & Water, mixed

  • Garam Masala Powder

  • Fennel Powder

  For yogurt batter

  • Curd

  • Ghee, for frying

  • Kashmiri Red Chili Powder

  • Garam Masala Powder

  • Salt

RECIPE

STEP 01

Clean the pieces and boil the ribs in water until they turn brownish and float on the top. Drain the water.

STEP 02

Bring the milk and water mixture to a boil. To this add fennel powder, garam masala and salt. Add mutton pieces to it and cook on low flame until the meat is tender and milk mixture is absorbed.

STEP 03

Mix the curd with a little salt, chili powder, and garam masala. Dip the boiled ribs in the mixture. Place them on a wire rack for a few minutes.

STEP 04

Heat the ghee in the pan and fry the pieces until golden and crisp.

STEP 05

Serve them hot.

  • Directly pressure cook the ribs for few minutes.
  • Dipping in curd can be exempted.
  • Fry right before serving for a crisp texture.
